Here are some tried and true/favorite recipes! I will continue to add.
BREAKFAST
- SMOOTHIES! Seriously, all the smoothies.
- Sweet Potato Baked Oatmeal
- 1 hour Cinnamon Rolls
- 1 Bowl Blueberry Muffins
LUNCH/DINNER
- Braised Tofu
- Bahn Mi Sandwiches
- Curry Chickpea Salad
- Smoked Black Eyed Pea Soup
- Dan’s Homemade Noodle Soup (recipe below)
SIDES
- Cinnamon Roasted Sweet Potato and Apples
- All Purpose Cheese Sauce (like a nacho cheese sauce!)
DESSERTS
Dan’s Amazing Homemade Noodle Soup (I request several times a week!)
- 8-10 oz dried noodles or 16-20 oz fresh noodles (we love fresh ramen)
- 1 c chopped celery
- 1 c chopped carrots
- 2-3 cloves minced garlic
- 1 tbsp minced ginger
- 8 c veggie broth (we use Better than Bouillon)
- 2 tbsp white miso
- 1/4 c soy sauce
- 1 tbsp rice vinegar
- Boil noodles in soup pot according to package instructions. Drain and rinse with cold water.
- Add a little avocado oil to the pot. Saute carrot and celery on medium heat for 2-3 minutes.
- Add ginger and garlic and saute for 1 minute.
- Add broth, miso, soy sauce, and rice vinegar. Stir and bring to a boil. Turn to low.
- Taste and adjust seasonings until you like how it tastes.
- Scoop noodles in bowl and fill with broth.
- We also add tofu and additional veggies like bok choy, zucchini, and green onions. Good with sriracha, gochujang, or other fav hot sauce.
